We’re going through this amazing roasted vegetable phase; we can’t get enough olive oil-drenched broccoli and cauliflower. (The humble carrot may be my favorite vegetable, but Auntie Judy doesn’t want them in.) The oven is disgusting, but that dish is really the only thing I look forward to eating these days.
Speaking of oily roasted vegetables, I miss ratatouille. I would eat it cold in the walk-in freezer at Green Gulch, I loved it so much. But I’m too lazy too cook it now.
Yes, lazy.

Aubergine is one of the most beautiful colors. Eating eggplant, not going to happen. ♥
